Cheese Cake Bites
The perfect sized bite of cheese cake. The only problem is you can't stop at just one! They are delicious and easy to make.
Equipment

- 9×9 baking dish

Ingredients
- 1 1/2 Cup Graham crumbs
- 1 1/4 Cup Confectioners sugar
- 1 tsp salt
- 1 stick butter
- 16 oz Cream Cheese 2 Bricks
- 1 tsp Vanilla extract
- 3 Cups Chocolate Chips
Optional for Decoration
- 1 Cup White Chocolate
Instructions
- In a large bowl, combine graham cracker crumbs, 1/4 cup of confectioners sugar, salt and melted butter. Stir until mixture is the consistency of wet sand.
- Dump the graham cracker mixture into a 9×9 inch baking dish lined with parchment paper. Press the mixture down with your hands to create an even layer. Make sure the mixture is pressed down tightly.
- Freeze for 10 minutes.
- In a separate bowl, combine cream cheese, 1 cup confectioners sugar and vanilla. Beat until smooth and creamy.
- Spread the cream cheese mixture evenly on top of the graham cracker crust. Tap down pan until all air bubbles are gone and top is nice and even
- Freeze for at least one hour (two is better)
- Transfer the frozen cheese cake on to a cutting board (Upside down) and peel away the parchment paper. Turn cheese cake over so graham side is down.
- Cut into 1/2 inch cubes.
- In a double boiler, melt the chocolate. Water just be gently boiling not rapid boil.
- Once chocolate is fully melted, dip the cheese cake cubes into the chocolate, dripping off excess chocolate and set them on a tray lined with parchment paper. Repeat until all cubes are chocolate covered.
- Freeze for 15 minutes to ensure chocolate is firmly set.
- [OPTIONAL] In a double boiler, melt which chocolate.
- Once fully melted transfer to a piping bag with a fine point (Zip lock bag with corner cut off will also work)
- Drizzle white chocolate lines over cheese cake cubes for decoration.
- Freeze for 10 minutes
- Serve end Enjoy!
Notes
You can also use sprinkles instead of white chocolate to decorate.
