Ingredients

  • 1 lb Italian Ground Sausage
  • 1 bag Penne Pasta
  • 1 tbsp Olive Oil
  • 1 Medium Yellow Onion Minced
  • 2 Cloves Garlic Minced
  • 1/2 tsp Red Pepper Flakes
  • 1/2 tsp Salt
  • 2 Cups Heavy Cream (35% works best)
  • 3/4 Cup Baby Spinich uncooked
  • 1 Cup Shredded Parmesan Cheese
  • 1/4 Cup Dry White Wine (Chardonnay or Pinot Grigio works well)

Equipment

  • Frying pan
  • Wooden Spoon
  • Large Pot
  • Chef's Knife
  • Measuring devices

Method

  1. Cook the penne pasta in a large pot of salted boiling water according to package directions.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat.
  3. Cook the Italian sausage along with the onion, garlic, red pepper flakes, and salt until the sausage is no longer pink.
  4. Drain excess fat from the skillet if necessary and return the meat mixture to the pan. (It's ok to leave a little grease in the pan for extra flavor)
  5. Turn heat to medium add the wine and cook for an additional 5 minutes.
  6. Turn the heat to low and add the cream to the skillet. Bring to a simmer and add in the spinach.
  7. Cook, stirring for about 3 minutes until the spinach is wilted.
  8. Stir in the parmesan cheese until melted.  Stir the pasta into the sauce.
  9. Serve immediately.

Notes

This is a quick and easy dish that is one of my family favorites. Serve with the same wine you cooked the sausage in.
When serving, sprinkle a dash of Parmesan cheese on top for added flavor.
