Ingredients
  

  • 15 oz Can black beans rinsed and drained
  • 2 cups Cubed peeled sweet potatoes
  • 32 oz Reduced sodium chicken broth
  • 2 tsp Salt free Jamaican jerk seasoning blend
  • 1/4 tsp Black pepper
  • 2 cups Chopped cooked chicken
  • 1 cup Mild or Medium salsa

Method
 

  1. In a large saucepan combine black beans, sweet potatoes, chicken broth, Jamaican Jerk Seasoning and pepper. Bring to boiling, reduce heat.
  2. Cover and simmer 15-20 minutes or until sweet potatoes are tender
  3. Stir in chicken and salsa. Cook, stirring occasionally, about 5 minutes or until heated through.

Notes

Makes 4 servers (Aprox 2 cups / serving)
TIP: Add an extra sprinkle of Jamaican jerk seasoning and serve with lime wedges for squeezing.
