
Spicy Sausage and Collard Soup
This hearty soup will sure to be a fan favorite. Delicious and just the right amount of spice.
Ingredients
Method
- In a 5 quart pot cook Italian sausage, onion, red bell peppers and garlic over medium until sausage is browned, breaking into small pieces as it cooks.
- Add chicken broth, cannellini beans, diced tomatoes, parmesan rind, bay leaf and Italian seasoning and bring to boil
- Reduce heat and simmer, covered, 20 minutes – stirring occasionally
- Remove bay leaf and parmesan rind (if using).
- Add collard greens and bring to boil again.
- Reduce heat and simmer, covered for about 10 minutes or until collards are tender.
- Remove from head and stir in basil.
- Top servings with additional basil and parmesan
