Ingredients
  

  • 1 lb Spicy Italian Sausage
  • 1 Onion Chopped
  • 1 Red Bell Pepper Chopped
  • 2 Cloves Garlic Minced
  • 4 cups carton reduced-sodium chicken broth
  • 15 oz Can Cannellini beans rinsed and drained
  • 14.5 oz can diced tomatoes undrained
  • 1 4X1 inch parmesan rind optional
  • 1 bay leaf
  • 1 tsp Italian seasoning Crushed
  • 8 oz bunch collard greens or kale stemmed and chopped
  • 1/2 cup chopped fresh basil
  • Grated Parmesan Cheese

Method
 

  1. In a 5 quart pot cook Italian sausage, onion, red bell peppers and garlic over medium until sausage is browned, breaking into small pieces as it cooks.
  2. Add chicken broth, cannellini beans, diced tomatoes, parmesan rind, bay leaf and Italian seasoning and bring to boil
  3. Reduce heat and simmer, covered, 20 minutes – stirring occasionally
  4. Remove bay leaf and parmesan rind (if using).
  5. Add collard greens and bring to boil again.
  6. Reduce heat and simmer, covered for about 10 minutes or until collards are tender.
  7. Remove from head and stir in basil.
  8. Top servings with additional basil and parmesan
